Artisan Bread Baking

Americans have fallen in love with traditional European artisan breads. Now you can learn the craft of artisan bread baking in just 6 weeks at The French Culinary Institute in New York City. Our course teaches you everything from basics and theory to the minute factors that can make a big difference in artisan bread baking. You'll discover how fun and interesting it can be to make these international artisan breads. The Art of International Bread Baking is a 6 week course designed for career-oriented culinary students. The Art of International Bread Making starts by introducing you to the basics and theory of artisan bread baking. You'll begin by learning how flour, water, yeast, salt and a variety of other ingredients can be used to create shiny-crusted baguettes, chewy pumpernickels and other artisan breads. Our hands-on approach will have you baking French Baguettes and Pain au Levain on the very first day. During the course of three two-week units, your artisan bread baking experience will include:

  • Baking the most beloved artisan breads of France.
  • German and Eastern European artisan breads.
  • Italian artisan breads, including ciabatta and grissini.

A wide variety of factors can affect the taste and texture of artisan breads. As a student of The FCI, you'll learn the effects milling, water hardness, rising time, kitchen humidity and even weather can have on artisan bread baking - and how to make adjustments that will ensure a consistent result. Differences in shaping, proofing and baking techniques and their ability to yield vastly different results from the same bread will be learned as well. You'll acquire the skills to be a great baker directly from experienced, accomplished bakers. Your final project will involve the creation of your own unique artisan bread recipe which is then reviewed by members of The FCI faculty.
