Cake Decorating Classes

As part of our Classic Pastry Arts curriculum, students at The French Culinary Institute will experience cake decorating classes that will give them the instruction they need to skillfully express their creativity. This is a must for the student interested in becoming a wedding cake designer or pursuing other baking and pastry careers. This program has been written by our Dean, the acclaimed Jacques Torres, one of the youngest recipients of the prestigious Meilleur Ouvrier de France Pâtissier Award. Our cake decorating classes will expose you to a unique, hands-on approach to learning, as instructed by our distinguished faculty as well as Visiting Master Pastry Instructor Ron Ben-Israel whose critics have referred to as "The Wedding Cake Master..." (Zagat Survey). Whether you're looking into becoming a wedding cake designer, or want to enhance other pastry skills, you will benefit greatly from the experience and guidance of our knowledgeable Pastry Chef Instructors. We offer pastry arts programs for amateurs looking to refine their skills, and programs for career-oriented students looking to become professional pastry chefs.

Our Classic Pastry Arts program covers everything from the essentials to the intricacies of fine pastry making. Rather than enrolling in traditional cake decorating courses, students will attend cake decorating classes as part of a comprehensive Pastry Arts culinary education program. Everything you need to know about baking fine cakes is taught along with other pastry skills. You'll be prepared for the world's finest kitchens with the experience you gain at The FCI.

The classes on cake decorating you attend at The FCI will place you in a fast-paced, hands-on environment like no other. You'll develop the skills and experience required to succeed in today's top restaurants and bakeries. The Pastry Arts program lasts for 6 months of day classes or 9 months of evening classes. You'll receive your Grand Diplôme in months instead of years, and be fully prepared to enter the culinary workforce. While the education you receive at The FCI is often enough to get many of our graduates hired right after graduation, we are committed to keeping our graduates employed. As one of the top cooking schools in the country, we've built a significant international network of alumni that hold influential positions in every aspect of the culinary industry. Wedding cake designers are one of the many positions to be filled from the more than 2000 requests we get for graduates every year. As part of our Classic Pastry Arts program, students take part in classes that teach them the skills needed to create memorable wedding cakes.

Future wedding cake designers and pastry chefs will make, assemble and decorate stunning three-tiered wedding cakes through the use of specialty fillings, frostings, decorations and skilled techniques. Students will be challenged with designing and creating a cake for "clients" with specific requirements and concerns to be addressed. Once you complete our Pastry Arts culinary education program, you'll be on your way to becoming a wedding cake designer, or work in one of any number of pastry related professions. For those who may not be looking for a career in Pastry Arts, but want to enhance their current skills at one of the best culinary schools in the country, our Pastry Techniques course is the perfect solution. This is a 20-session course designed for serious amateur pastry chefs looking for an education that will give them a taste of a professional pastry kitchen. Every Saturday, classes meet from 9:30am - 2:30pm. Handling chocolate, controlling a pastry bag, mastering cakes and pastry dough, are all part of the sweetest 100 hours you'll ever spend. Our cake decorating classes, as well as others, will place you at a completely furnished workstation, with only restaurant-quality ingredients to work from. Here is a taste of what you'll master:

The FCI's Pastry Arts program offers a hands-on experience other cake decorating courses and cooking schools just can't match.
