An Intensive Cooking Class in Italy

If you're interested in learning how to become a superlative Italian cook, learning how to prepare traditional regional Italian food, as well as learning its integral role in Italian culture, what better way to learn than by taking a cooking class in Italy? FCI's unique Italian Culinary Experience uses our Total ImmersionSM approach to culinary education: you get a solid foundation in language and Italian cooking terms, the history of Italian cooking, the professional Italian kitchen, and much more in New York. Then you're off for nine weeks of additional training in Parma, Italy under the tutelage of the expert chefs at ALMA, the International School of Italian Cuisine. After that, you'll spend nine weeks honing your craft by working in a noted Italian restaurant. The Italian Culinary Experience offers comprehensive training in New York City, an intensive nine-week cooking class in Italy, real-life experience in a professional Italian kitchen, and an experience unlike any other.

The Italian Culinary Experience begins in our kitchens in New York City. You'll spend the first week in the classroom undergoing comprehensive training in the Italian language, the Italian culture and the role cuisine plays in their culture and history. The following nine weeks provide intensive training in all aspects of Italian cuisine, building your knowledge and skills and preparing you for your cooking class in Italy. Your New York City training on the professional Italian kitchen and traditional regional Italian food will include the following components:

  • Italian Cheeses and Antipasti: Your ICE training will include instruction in the selection and preparation of vegetables, fish, meat, antipasti, the many different Italian cheeses, and specialty items;
  • Stocks and Sauces: From traditional minestrone soup and basic stocks and sauces to pesto and béchamel, you'll learn the full range of Italian soups, stocks, and sauces;
  • Pasta and Pasta Making: You'll learn the intricacies of the many varieties of fresh, dried, and filled Italian pasta, pasta making (both by hand and machine), sauces, fillings, and much more;
  • Fish: ICE's intensive instruction includes lessons on selecting and preparing fish and seafood;
  • Meats: You'll learn how to purchase, prepare, and store the many types of meat used in traditional regional Italian food;
  • Italian Pastry and Dessert: We cover the many forms of Italian pastry and dessert, including tiramisu, cannoli, gelato, and much more.

The ICE Cooking Class in Italy

Once you've completed the New York City Italian cooking classes, it's time to reinforce, enhance, and deepen that training by learning authentic cooking in Italy. Your Italian Culinary Experience continues in Parma, where the renowned Chef Cesare Casella of Maremma has built the most comprehensive curriculum available for the aspiring Italian chef. The first part of your cooking class in Italy takes place over nine weeks of intensive instruction at ALMA, The International School of Italian Cuisine. You'll spend your time cooking in Italy side by side with a minimum of sixteen expert (one or two star Michelin®) Italian chefs in a fully-equipped contemporary educational and cooking center in Colorno, learning to prepare and present traditional regional Italian food as only experienced chefs can teach it. From pasta making to choosing, preparing, and presenting Italian meats to learning the history of Italian cuisine and its crucial role in the country's culture, you'll experience one-of-a-kind cooking instruction in Italy.

To further deepen your training, and your understanding of and appreciation for traditional regional Italian food, you'll spend five days of your training visiting production sites, including a visit to the truffle museum at Alba, a pasta-making production plant, a tour of Tuscan olive oil mills, visits to Chianti, Montalcino, and Barolo wineries, and much more.

Your Cooking Class in Italy - Nine Weeks On-Site

Following this intensive cooking class in Italy, you'll take what you've learned on-stage in a pre-selected restaurant, where you'll spend nine weeks honing your methods and techniques and deepening your knowledge of a specific region's cuisine. Additionally, this stage will allow you to experience cooking in Italy under pressure, an essential skill for those interested in working in the professional kitchen. Once you're done cooking in Italy, you'll head back to New York City for your final assessment.
