Chocolate lovers will be in heaven with this intensive course that will teach you how to create gourmet chocolate and mold it into candies of your own original design. You will learn how to temper, mold, and dip chocolate to make irresistible delights including truffles, chocolate dipped toffee, raspberry squares, chocolate bars, and bonbons.

And the sweetest part is you can do it all when it fits your schedule. Chocolate Truffles, Bonbons & More was designed to deliver a wide range of skills in a very manageable amount of time. With two scheduling options, you can even pick the time that suits you best. You'll get access to the same modern facilities and distinguished Chef-Instructors that have made The FCI one of the world leaders in culinary education in a short class that's easy to find time for.

Using our unique Total ImmersionSM training method, you'll get intensive, hands-on training in every aspect of chocolate, from cocoa bean to dessert cuisine. You'll get individual guidance from the same Chef-Instructors who teach our career students, and access to the secrets they've picked up working in some of New York City's most popular confectioneries.

Each class starts with a brief discussion of the science and theory of chocolate, but most of your time is spent in the kitchen doing, not watching. In just 25 class hours, you'll learn more than you ever thought possible. You'll:

  • Create simple decorative chocolate pieces of your own
  • Fill and decorate a wide variety of chocolate candies
  • Understand how chocolate is made, including harvesting and manufacturing, tempering methods, dipping candies, and making molded chocolate
  • Design a customized box to showcase your original chocolate creations
  • Learn proper techniques for storing chocolate
  • Become proficient with the proper tools used in chocolate work
