FCI’s Italian Cooking Course: Two Levels of Instruction

Do you want to feel more confident in the kitchen or take the next step in your culinary career? The French Culinary Institute is proud to offer two comprehensive Italian cooking courses spanning from the basics of the professional Italian kitchen to Total Immersion, featuring international study and travel.

You will spend your time in class cooking Italian cuisine with accomplished Chef-Instructors in one of three courses.

  • The first is our intensive Italian Culinary Experience, offered as a top level cooking course that will take you across the world to Italy and back again.
  • Our second course is Essentials of Italian Cooking, which caters to those who are looking for an easy way to fit an Italian cooking class into a busy schedule, yet still provide comprehensive, expert instruction in Italian cuisine.

The Italian Culinary Experience is our most intensive Italian cooking course. You will start your journey in New York City learning the basics of the Italian cuisine, culture, and language for 10 weeks. From there you will leave for Parma, Italy, to begin nine weeks of exhilarating instruction at ALMA, The International School of Italian Cuisine, with Gualtiero Marchesi. Marchesi is a recognized leader in Italian cookery and the first Italian to receive 3 Michelin stars. You will receive intense one on one expert instruction from one of many superb Italian chefs in a creative, fast-paced, and fully-equipped cooking facility in Palazzo Ducale in Colorno. After this, an additional nine weeks will be spent extending and reinforcing what you’ve learned from your Italian cooking course into real world practice by having you work and train in a noted Italian restaurant. Finally, you will return to New York City where you will learn kitchen management and take your final cooking exam. This 5-hour practical exam demonstrates what you have learned from your experience to an outside panel and your Chef-Instructors.

  • 10 weeks in New York City studying cuisine, culture, and language
  • 9 weeks in Parma, Italy, of exhilarating learning at ALMA
  • 9 weeks of intensive practice at a noted Italian restaurant
  • 1 week of kitchen management and your final exam

After nearly 30 weeks, you will emerge from the kitchen equipped with a comprehensive education of Italian cookery through these courses. This is an excellent opportunity for those looking to push their culinary skills to the next level.

Essentials of Italian Cooking is our "a la carte" cooking course: equally as intensive as the rest of our catalog, but broken into three complementary courses to allow you to learn Italian cookery at your own pace. Essentials of Italian Cooking 1 is a prerequisite to levels 2 and 3, although levels 2 and 3 can be taken in any order.


Essentials of Italian Cooking 1 starts you out cooking from day one. With Chef-Instructors close by you will learn to create stocks and sauces, the beginning of all great Italian cooking. Throughout this class, you will be able to watch your skills in Italian cuisine grow as you are taught a variety of the methods of classic Italian cookery.

Essentials of Italian Cooking instructs the budding Italian chef in a broad range of Italian cooking techniques. You’ll study Italian cuisine such as antipasti, stocks, sauces, pizza, soups, breads, and irresistible desserts.
