Unique among today's Italian cooking courses, the Italian Culinary Experience is a complete culinary experience and cultural immersion. We don't just teach you about cooking Italian - we take you there in every way we can, from incorporating language studies into the curriculum to conducting a nine-week session on location in Parma, Italy.

Totaling approximately 1,057 hours, this course features 313 hours of training in New York City, 384 hours at ALMA in Italy, and then approximately 360 hours working in the kitchen of a noted Italian restaurant. Designed by our preeminent Dean of Italian Studies (Chef Cesare Casella of Maremma restaurant and formerly of Beppe in Manhattan), our unique hands-on curriculum makes this one of the most innovative Italian cooking courses available anywhere.

The experience begins with 10 weeks of Italian cooking courses in New York City, where you'll gain a helpful overview of Italian cuisine, language, and culture. You'll cover everything from Italian cooking terms to traditional Italian recipes of stocks, sauces, pizza, pasta, meats, and more.

Then, armed with your newfound expertise and knowledge, it's off to Parma, Italy for nine more weeks of Italian cooking courses at ALMA, the International School of Italian Cuisine led by world-renowned chef Gualtiero Marchesi. You'll learn techniques for both new and traditional Italian recipes from native pros, cooking side by side with expert Chef-Instructors in world-class teaching facilities.

Finally, you'll experience an exhilarating apprenticeship at a top Italian restaurant. Here's where you'll really be able to put your new skills from our Italian cooking courses into practice, gaining valuable experience in the field as you learn the fundamentals of kitchen management.
