FCI's Italian Cooking School

Have you been looking for an Italian cooking school that provides intensive training while meeting your scheduling needs? The French Culinary Institute is proud to offer two courses of study, each ideal for the aspiring Italian chef.

  • The Italian Culinary Experience (ICE) is an intensive, Total ImmersionSM program consisting of 10 weeks of training in New York, followed by nine weeks of study at ALMA, one of the finest cooking schools in Italy. Your ICE classroom training is followed by nine weeks on-stage in the kitchen of a noted Italian restaurant, then the course wraps up with a final week in New York City.
  • Essentials of Italian Cooking is the perfect program for those seeking to become a better Italian chef but who don’t have the time to attend Italian cooking school full-time.

The most intensive of our Italian cooking school programs is the Italian Culinary Experience, or ICE. You begin your Total ImmersionSM Italian chef training in New York City, where you'll spend ten weeks learning the language and history of traditional Italian food, and how to select and prepare authentic Italian cuisine. Once you've built a solid foundation in traditional Italian food, you're off to Italy for nine weeks at the Palazzo Ducale in Colorno. You'll strengthen your knowledge of the Italian language and your understanding of the country's culture while learning how to cook traditional Italian food from some of Italy's top chefs. Once your classroom training is complete, you'll spend nine weeks on-stage, working in an Italian restaurant pre-selected by our Chef-Instructors, further deepening what you've learned in the pressurized atmosphere of a professional Italian kitchen. When your staging experience is complete, you'll return to New York City for your final examination. The Italian Culinary Experience provides a uniquely comprehensive approach to teaching Italian cuisine, one you won't find in any other Italian cooking school.

While developing our curriculum, the fact that many people don't have the ability to attend Italian cooking school full time informed us in our creation of Essentials of Italian Cooking, a program that consists 40 generous hours of talented instruction, for anyone interested in Italian cuisine. As with the other programs in our Italian cooking school, the program is hands-on, and includes Total ImmersionSM ; you'll be cooking from day one.

In Essentials of Italian Cooking, you will get unprecedented access to our renowned Chef-Instructors and our famous hands-on Total ImmersionSM training method when it’s convenient for you. You will not only learn knife skills, but train to cook a variety of traditional Italian dishes from antipasti, stocks, sauces, pizza, pastas, soups, breads, and irresistible desserts.
