One of the best culinary schools in the country, the FCI prepares you for careers in higher-level pastry chef jobs through a rigorous, hands-on environment. Students acquire this experience under the guidance of our distinguished Chef Instructors. All of whom have been trained as effective communicators and inspiring teachers in cooperation with the esteemed director of the Klingenstein Center at Columbia University Teachers College to help you prepare for the pastry jobs you're likely to find once you graduate. Our Chef Instructors communicate their knowledge and skills through a curriculum designed by renowned chef Jacques Torres, one of the youngest recipients of the Meilleur Ouvrier de France Pâtissier Award.

With his personalized curriculum and monthly demonstrations, Chef Jacques Torres is helping to prepare students for competitive pastry chef jobs as no other pastry chef could. He joined The FCI in 1993, and since has shared his passion for the pastry arts through demonstrations and hands-on classes. Previously, he was the executive pastry chef at Le Cirque 2000. In addition to his duties overseeing our Classic Pastry Arts program, Torres is currently chocolatier and co-owner of Jacques Torres Chocolate Haven in Manhattan and Jacques Torres Chocolate in Brooklyn. He also has the privilege of hosting "Chocolate with Jacques Torres" on the Food Network.

In our Pastry Arts career program, students learn the essential elements of fine pastry that make them an ideal candidate for pastry chef jobs. The science, art, and little bit of magic required to create masterful pastry is taught through our unique approach and accomplished faculty. Your training will begin with equipment basics and theory, which are an important part of your training, but the majority of your time will be spent training in a hands-on environment, preparing for the pastry chef jobs you'll be working in after graduation. In fact, on your first day you'll already be putting to use the knowledge you have gained to create a French apple tart.

Our hands-on, fast-paced curriculum combined with a world-class faculty sets us apart from other pastry schools. The following are just some of what you'll create at your customized workstation:

  • Pâte à choux (cream puff pastry).
  • Pâte feuilletée (puff pastry), for napoléons and palmiers.
  • Croissants, Danish and brioche, and a full range of quick and yeast breads.
  • Bite-sized petit fours.
  • An incredible realm of cakes, from the génoise to the dacquoise.
  • A romantic, three-tiered wedding cake.
  • Sophisticated plated restaurant desserts made to order ("à la minute").
  • Blown sugar, spun sugar, pulled sugar and marzipan to dramatize a dessert or make a presentation piece.
  • Glorious chocolate: creating delectable candy and decorative showpieces.
